Being a type 1 diabetic, her goal is to help those struggling with adult diabetes find healthy recipes that are quick and easy, like these gr8nola sweet potato toasts. 

Ingredients

  • 1 large sweet potato
  • 1/4 cup plain hummus
  • 2 chopped medjool dates
  • 1/2 cup blueberries
  • 1/3 cup gr8nola

Directions:

  1. Wash your sweet potato and slice vertically (about 1/4-1/3 inch thick). Depending on the size of your sweet potato, you should have 4-5 slices.
  2. Toast your sweet potato slices in a toaster or toaster oven. If you're using a traditional toaster, heat on the highest setting for 3-4 cycles. If you're using a toaster oven, heat your sweet potato slices until brown spots start to appear. using a toaster oven.
  3. Once toasted, let your sweet potato cool until they are cool enough to handle. Spread hummus on each slice. Top with blueberries, chopped dates and gr8nola. Enjoy!
