Ingredients
- 1 large sweet potato
- 1/4 cup plain hummus
- 2 chopped medjool dates
- 1/2 cup blueberries
- 1/3 cup gr8nola
Directions:
- Wash your sweet potato and slice vertically (about 1/4-1/3 inch thick). Depending on the size of your sweet potato, you should have 4-5 slices.
- Toast your sweet potato slices in a toaster or toaster oven. If you're using a traditional toaster, heat on the highest setting for 3-4 cycles. If you're using a toaster oven, heat your sweet potato slices until brown spots start to appear. using a toaster oven.
- Once toasted, let your sweet potato cool until they are cool enough to handle. Spread hummus on each slice. Top with blueberries, chopped dates and gr8nola. Enjoy!
