Salmon Avocado Mango Zoodle Salad

Our first savory cleanse-friendly recipe for #TheGr8Cleanse 2017 is from one of our favorite food bloggers, Valerie Fidan. We're in love with this incredible Salmon Avocado Mango Zoodle Salad for lunch or dinner—packed with protein, healthy omegas, veggies and a kick of natural sweetness from the fruit.

What you'll need:

  • 4oz salmon
  • 1/2 tbsp coconut oil
  • 1 zucchini, zoodles
  • 1 tsp pine nuts
  • 1/4 avocado, sliced
  • 1/4 cup mango, peeled
  • 1 cup baby spinach
  • 2 lime wedges lime
  • 1/4  tsp grated ginger
  • sea salt, to taste
  • 2 tsp coconut aminos
  • juice of 1/2 blood orange
  • 1 tsp hemp seeds

Directions

Preheat oven to 425F. Coat salmon with coconut oil and season with sea salt and pepper, to taste. Bake salmon for 12-15 minutes.

While salmon is cooking, zoodle 1 zucchini, and in a bowl toss it with coconut aminos, grated ginger, juice from blood orange, babe spinach, and sea salt.

Using a peeler, peel 1/4 cup mango and add to zoodles.

Add pine nuts, mango, avocado, hemp seeds, blood orange slices (optional), salmon and lime wedges. Enjoy!
