Girl Scout cookie season is underway, and we've lost count of how many boxes of Thin Mints we've devoured! We recreated a clean ingredient, vegan version of these tasty mint chocolate cookies using our Black Coco Chia gr8nola and superfoods cacao powder and coconut oil for added benefits.

Vegan Thin Mint Cookies



  • 1 bag Black Coco Chia gr8nola
  • 1 Tbsp. cacao powder
  • 4 Tbsp. coconut oil
  • 3 Tbsp. maple syrup
  • 1-2 tsp. peppermint extract

Chocolate Coating:


  1. Line a baking sheet with parchment paper, then set aside.
  2. Blend Black Coco Chia gr8nola to a fine flour.
  3. In a large bowl, combine all cookie ingredients until a soft cookie dough forms.
  4. Chill the dough for at least 30 minutes, then roll into ½ inch balls. Place the cookie balls onto the prepared baking sheet, then flatten into thin discs. Set aside.
  5. Melt the vegan dark chocolate chips with the coconut oil until smooth and creamy. 
  6. Stir in the peppermint extract until fully combined.
  7. Dip the prepared cookie discs into the melted chocolate, then place on the parchment paper or a cooling rack to set.
  8. Place the cookies in the fridge to set, then enjoy!
