It’s the most wonderful time of the year, and we can’t wait to whip up these decadent double dark chocolate cookies with a cool peppermint blast of flavor. We made these cookies with our Black Coco Chia gr8nola and activated charcoal which give them a beautiful dark hue. These cookies will have you asking Santa for “coal” this year! ;)

Chocolate Peppermint Charcoal Cookies
Ingredients
Cookies:
- 1 cup Black Coco Chia gr8nola
- 1 cup oat flour
- ½ tsp. baking powder
- ½ cup coconut sugar
- 3 tsp. activated charcoal powder
- ⅓ cup cacao powder
- 1 ¼ cup cashew butter
- 1 chia egg
- ⅓ cup coconut oil
- 2 Tbsp. peppermint extract
- 1 cup dark vegan chocolate chips
White Chocolate Dip:
- Vegan white chocolate
- Coconut oil
- Peppermint extract
- Crushed candy canes
Directions
Cookies:
- Preheat oven to 350F.
- Line a cookie sheet with parchment paper and set aside.
- In a blender or food processor, blend the oats and Black Coco Chia gr8nola until a fine flour is achieved.
- In a medium bowl, combine all dry ingredients (except for the chocolate chips) and stir until fully combined.
- Add the wet ingredients, and stir until fully combined.
- Fold in the chocolate chips until evenly spread throughout the cookie dough.
- Roll into balls, place on the prepared cookie sheet, and bake for 8-10 minutes.
- Allow to cool while you prepare the white chocolate dip!
White Chocolate Dip:
- Melt the white chocolate and coconut oil until smooth.
- Dip each baked cookie into the melted white chocolate, place on the parchment paper lined cookie sheet, then sprinkle with crushed candy canes.
- Allow to set (place in the fridge for a shorter wait time), then enjoy!
