Valentine’s Day is around the corner, and we’ve got chocolate on our mind! This recipe for No-Bake Vegan Chocolate Tarts is decadent and luscious, but completely clean (no dairy, soy or refined sugars here!)

Besides being healthier than regular chocolate, these adorable mini tarts actually contain superfoods like coconut oil, maca powder and cacao. According to Medical News Today, maca has been shown to improve mood and increase energy, and both coconut oil and cacao are known for their many health benefits, including lots of heart-healthy antioxidants! What could be better for Valentine’s day (or every day :)?

No-Bake Vegan Chocolate Tarts Recipe

No-Bake Vegan Chocolate Tarts

Makes: 22-24 mini tarts


Ingredients:

Crust:

  • 6 dates, soaked in hot water to soften and pits removed
  • ¼ cup coconut oil, melted
  • 1.5 cups gr8nola, any flavor (We recommend our Matcha Green Tea  gr8nola for a super yummy twist!)
  • 1.5 cups walnuts (pecans work, too)
  • Pinch of sea salt
  • ⅛ tsp maca powder, optional

Chocolate Filling:

  • 1 cup cacao powder or cocoa powder
  • ½ cup coconut oil, melted
  • 8 Tbs maple syrup

Directions:

Crust: Using a food processor, blitz together the walnuts and gr8nola into a crumbly mixture. Next, add the coconut oil, sea salt, maca if using, and dates. Blend for 1-2 minutes until mixture comes together to form a sticky, dough-like texture (if your food processor is too small, you can do this process in stages and hand mix the ingredients in a bowl).

Prepare two muffin tins with liners, then drop a rounded tablespoon of the dough into each liner and use your fingers to push the dough into a flat layer. If it’s very hot in your kitchen, you might want to pop these in the refrigerator while you work on the chocolate filling.

Chocolate filling: In a small bowl or glass measuring cup, mix together the ingredients for a clean dairy-free chocolate. Pour the mixture over the gr8nola layer, using about 1 Tbs of chocolate for each tart. Use a spoon to spread the chocolate to the edges of the liners if needed. If desired, top with freeze dried strawberries, more gr8nola, nuts, chia or coconut!
