Peanut Butter Protein Balls
Ingredients
- 1 bag PB gr8nola
- ½ cup plant-based protein powder (unflavored or vanilla)
- dash of salt
- 1 cup peanut butter
- ⅔ cup honey
- optional: ashwagandha powder
- optional: vegan dark chocolate chips
Directions
- In a blender or food processor, blend the gr8nola to a fine flour.
- In a large bowl, combine the gr8nola, protein powder and salt. Add the ashwagandha powder, if using. Stir until fully combined.
- Add the peanut butter and honey, and stir until the mixture comes together (kind of like a cookie dough texture).
- If using chocolate chips, fold them into the mixture.
- Scoop the prepared mixture by the tablespoon, and roll into balls.
- Enjoy, and store in an airtight container for up to a week!
