Love rice krispies but not a fan of all the not-so-clean ingredients that marshmallows can bring to the table? We made these ooey-gooey and perfectly crunchy White Chocolate Matcha Rice Krispies using only clean ingredients (and no marshmallows or other processed sweeteners -- yes, you read that right!) so that you can snack on rice krispie squares while getting your superfoods in. 

Unlike regular rice krispie treats, these bars are vegan-friendly -- we used a sticky sweet all-natural combo of cashew butter, honey and coconut sugar as the binding agent to bring these crispy bars together, and the added flavor is absolutely delish!

These clean ingredient rice krispies have a superfood energy boost from Matcha Green Tea gr8nola and matcha powder, which is known for its ability to increase energy without the jitters of caffeine -- so you can feel gr8 while snacking on a bar (or two).

Makes 9 bars

Ingredients

Bars:

White Chocolate Matcha Coating:

  • ⅔ cup white chocolate chips
  • 2 tsp. coconut oil
  • 2 tsp. matcha powder

Vegan Matcha Rice Krispies Recipe

Directions

Bars:

  1. Grease an 8x8 pan with coconut oil, and set aside.
  2. In a large bowl, combine the crispy rice and gr8nola. Set aside.
  3. Over low heat, combined the coconut sugar and honey. Stir continuously, while the coconut sugar melts into the honey.
  4. Add the cashew butter, and turn off the stove. Stir until fully combined, and a smooth texture is achieved.
  5. Pour the cashew butter mixture into the large dry ingredients bowl. Using a spatula, mix until fully combined.
  6. If using white chocolate morsels, add them in and stir until just combined (if you add them too early, they will melt!).
  7. Using a spatula, transfer the crunchy mixture into prepared 8x8 pan. Press down lightly using the spatula, until a flat surface is achieved. 
  8. Allow bars to cool one hour prior to serving (although they are DELISH warm :).

White Chocolate Matcha Coating:

  1. In a microwave (15 second intervals), or over a double boiler, melt the white chocolate and coconut oil until smooth.
  2. Pour the white chocolate into 2 separate bowls, and add matcha powder to one bowl. Stir until fully combined and smooth.
  3. Drizzle the white chocolate and the matcha white chocolate on top of the prepared rice krispies.
