These vegan-friendly chewy chai blondies are packed with warm superfood spices in every bite. Indulge in these tasty bars as a crave-curbing snack, a sweet dessert, or even a guilt-free breakfast treat!

Not only are these blondies free of dairy, nuts, soy and refined sugar, but they include our superfood Cinnamon Chai gr8nola for added benefits, as well as other nutrient-dense ingredients including chia seeds and coconut oil (and of course, antioxidant and anti-inflammatory chai spices).

Chewy Chai Spiced Blondies

Ingredients

  • 1 cup oat flour
  • 1 cup Cinnamon Chai gr8nola
  • 1 tsp chai spice combo
  • 1 tsp cinnamon
  • 1/s tsp. baking powder
  • 1 cup coconut sugar
  • 2 chia eggs
  • 2/3 cup coconut oil
  • 1 tbsp. vanilla extract
  • Cinnamon coconut sugar (optional to sprinkle on top -- simply mix coconut sugar with cinnamon!)

Directions

  1. Preheat the oven to 350F.
  2. Line a 9x9 pan with parchment paper and coconut oil.
  3. IF USING CHIA/FLAX EGGS: In a small bowl, make the chia eggs by combining the chia seeds and water, then stirring. Set aside while you prepare the other ingredients.
  4. In a blender, blend gr8nola until a fine flour is achieved.
  5. In a large bowl, combine the blended gr8nola, oat flour, cinnamon, chai spice mix, baking powder and coconut sugar. Mix until combined.
  6. Add the chia eggs, coconut oil and vanilla and stir until fully combined.
  7. Pour the batter into the prepared pan.
  8. If desired, sprinkle with cinnamon sugar (coconut sugar mixed with cinnamon).
  9. Bake for 30-40 mins, or until a toothpick inserted comes out clean.
  10. Cool for 10 minutes, then enjoy!
