Dates have been having a moment, and we are TOTALLY here for it. We love using them as an ingredient in vegan caramel recipes (check out our No-Bake Vegan Twix Bars Recipe, made with an ooey-gooey date-caramel layer), as a binding ingredient in bar recipes, or even on their own as a chewy way to satisfy any sweet tooth cravings.
Eating dates on their own can get a little old though, and we’re all about creativity and mixing in some superfoods whenever we can -- that’s why we came up with these cashew butter stuffed dates topped with superfood ingredients including our very own Cinnamon Chai gr8nola, goji berries and dark chocolate chips. Talk about an antioxidant-packed punch! Each bite is oozing with chewy-gooey nut butter, sweet berries and melt-in-your-mouth chocolate. These are truly delicious any time of day, and are definitely satisfying as a clean dessert.
Superfood Stuffed Dates Recipe
Makes: 10 dates
Ingredients
- 10 medjool dates
- 4-5 Tbsp. cashew butter, or nut butter of choice (tahini is a gr8 option too!)
- Handful of toppings:
- Cinnamon Chai gr8nola (or any superfood flavor!)
- Dairy-free dark chocolate chips
- Goji berries
Directions
- Slice each date down the middle, and carefully remove the pit.
- Fill each date with cashew butter, then sprinkle with your chosen toppings.
- If desired, drizzle with more cashew butter or melted dark chocolate.
- Enjoy!
