These are soy, wheat, dairy and refined sugar-free so you’ll feel no guilt as you pull them from your freezer. Plus, they’re made with four staple ingredients and are no-bake so they’re quick and easy to throw together next time you throw a backdoor bash.

Not only are they completely clean, but these oreo cookies also pack a powerful nutrient punch. Our Black Coco Chia gr8nola is the key ingredient that gives these cookie sandwiches their beautiful dark hue. Oreo Nice Cream Sandwiches

Vegan Oreo Nice Cream Sandwiches

Makes: 6 large sandwiches

Ingredients

Oreo Cookies:

  • 1 cup Black Coco Chia gr8nola
  • 2 Tbsp. cocoa powder
  • 6 dates, soaked in warm water for 10 minutes
  • Pinch of salt
  • 1 tsp. ashwagandha, optional

Vegan Nice Cream Filling:

  • 3 frozen bananas
  • 1 tsp. vanilla bean paste, or 2 tsp. vanilla extract

    Directions

    Oreo Cookies:

    1. Add granola to a food processor and process until completely desiccated.
    2. Add the soaked dates to the food processor and blend until you have a thick, sticky texture. 
    3. Using an ice cream scoop or spoon, measure the oreo cookie mixture into 12 equally sized portions. Roll into balls and press flat into cookies. Place the cookies in the freezer while you make the nice cream.

    Vegan Nice Cream Filling:

    1. Blend the nice cream ingredients together in a food processor or high-speed blender. You might need to stop a few times and mix it by hand. Blend until smooth.

    Assembly:

    1. Pull the oreo cookies from the freezer, and add a few spoonfuls of nice cream to the top of six of the cookies. Place the other six cookies on top, creating six ice cream sandwiches. 
    2. Place the cookies in the freezer for 2-3 hours to allow them to harden. These will last in the freezer up to two weeks, making them perfect grab-n-go snacks!
